THE AUSTRALIAN SEAFOOD USERS MANUAL - MAKING THE MOST OF THE WORLD'S BEST (Yearsley, Onley & Brown, 2000) is an innovative new publication, produced by the Department of Primary Industries Queensland (DPI) with funding from the Fisheries Research and Development Corporation (FRDC). It is designed to take the confusion out of buying and preparing seafood, profiling more than 60 species of Australian finfish and shellfish. The manual is extremely user-friendly and includes full colour photographs of seafood species, fillets and recipes. It features eight chapters (365 pages), encompassing species profiles (enabling identification), buying, quality and safety, storage, preparation, cooking, recipes and marketing. A NATURAL HISTORY OF AUSTRALIA by Tim M. Berra is available in North America from Academic Press and in Australia and New Zealand from University of New South Wales Press.
